For Simon Vetter, diversity starts with the cultivation of field vegetables. Almost everything that can be cultivated in Central Europe is grown, from A for aubergine to Z for courgette (Zucchini), around a hundred types of vegetables in total. By growing vegetables, he is reviving a long tradition in the region that had almost completely disappeared in the last two generations. Originally, the cabbage-heavy crop rotation was also the best fit for the region's climate. By dispensing with pesticides, installing nesting boxes and planting flowering areas, some of which are perennial, the diverse food and refuge habitat for insects, birds and other wildlife is further enhanced.
