Barbara Schwar and her husband have switched from Fleckvieh cattle to Dexter cattle, the smallest European breed of cattle, for permanent grazing. Due to their lower weight, grazing is much gentler, especially on the predominantly moist soils of the pastures. The gentle grazing pays off: colourful, flowering pastures occur that are noticeably different from conventional, small-scale grassland in terms of plant diversity. The cattle are processed ‘from nose to tail’: Any fresh meat that is not sold is gently cooked into semi-preserves, bones and horns are processed into jewellery and hides are occasionally tanned.
